Cranberry Walnut Cake

This is a very quick-to-make treat! Though it tends to vanish vast, it keeps very well if permitted.


2 cups sugar
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
3 eggs
1/ 3 cup vegetable oil
1 cup milk
1 teaspoon vanilla
2 cups sliced cranberries
3/ 4 cup chopped walnuts
Sugar for sprinkling


Heat the oven to 350 F. Grease a 9 x 13 x 2 inch pan.
In large bowl, using a wire whisk, stir the first 4 ingredients until well blended.
Combine the eggs, oil, milk, and vanilla and whisk them in.
Stir in cranberries and walnuts and pour into the prepared pan.
Sprinkle top with sugar.
Bake until cake is golden brown and shrinking from the pan and a toothpick emerges clean, about 40 minutes. Let the cake cool in the pan and then cut it into squares.

Extra suggestions:

Slice cranberries in a food processor
Bake in two 9 ” pans
Glaze with a mixture of confectioner’s sugar and orange juice
Add a bit of orange rind or extract to the batter
Line pan with parchment paper for easy removal
