The Skagit Valley Malting Company in Burlington is setting up equipment and storing locally grain barley as it prepares to start producing a variety of specialty malts for regional beer brewers and whiskey distillers.
Founder Wayne Carpenter says its first batches of finished malt should be sold by November.
The Skagit Valley Herald reports the malting company has been working with the Washington State University research center in Mount Vernon on local varieties of wheat and barley with special flavors.
The Westland Distillery in Seattle also is working with the malting company. Master distiller Matt Hofmann hopes to produce a whiskey that can be traced back to the farm where the barley was grown.
