Here's a way to grab a quick and nourishing breakfast on the run on rushed weekday mornings, and it also makes a refreshing snack.
Bananas are a must, since they create a creamy texture when blended; but you can substitute other fruit for the strawberries, such as fresh blueberries or raspberries or fresh or canned pineapple. (If the fruit is not sweet enough, add some honey or sugar.) To add more protein, blend in about 2 tablespoons soy protein powder, which you can find at a health food store.
1 c. cold plain or vanilla-flavored soy milk
1 c. sliced strawberries1 ripe banana, cut into 1-inch-thick chunks
¼ tsp. pure vanilla extract
Garnish: sprig of fresh mint
Put all of the ingredients into a blender; blend until smooth. Serve immediately.
This smoothie is best when prepared just before serving; but leftovers can be covered, refrigerated, and served later the same day.
